This Baked Honey Marinade Cod features tender, flaky cod fillets infused with a sweet and savory honey marinade, perfect for a healthy and flavorful dinner option.

  • 4 cod fillets (6 oz each)
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, soy sauce, olive oil, minced garlic, grated ginger, and lemon juice.
  3. Season the cod fillets with salt and black pepper on both sides.
  4. Place the cod fillets in a baking dish and pour the honey marinade over them, ensuring they are well coated.
  5. Marinate for 15 minutes if time allows.
  6. Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  7. Remove from the oven and garnish with chopped fresh parsley before serving.

Notes

Serve with steamed vegetables or over a bed of fluffy rice for a complete meal. For extra flavor, brush additional marinade on the cod halfway through baking.
