Bang Bang Chicken Skewers

Bang Bang Chicken Skewers are a spicy, creamy, and crunchy appetizer perfect for grilling season or entertaining guests. These flavorful skewers combine tender chicken with a zesty bang bang sauce for a delightful bite.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 8 wooden skewers, soaked in water for 30 minutes
  • 1/2 cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 2 cloves garlic, minced
  • 1/4 cup panko breadcrumbs
  • 2 green onions, thinly sliced (for garnish)
  • Salt and pepper to taste
  • Cooking oil spray

Instructions

  1. Preheat grill or grill pan to medium-high heat and lightly oil the grates or spray with cooking oil.
  2. Thread the chicken cubes onto the soaked wooden skewers, about 4-5 pieces per skewer. Season lightly with salt and pepper.
  3. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and minced garlic until smooth to make the bang bang sauce.
  4. Place panko breadcrumbs in a shallow dish.
  5. Brush each chicken skewer lightly with some of the bang bang sauce, then roll in panko breadcrumbs to coat evenly.
  6. Grill the skewers for 4-5 minutes per side or until chicken is fully cooked and has nice grill marks.
  7. Remove from grill and brush remaining bang bang sauce over the skewers generously.
  8. Garnish with sliced green onions and serve immediately.

Notes

For extra crunch, toast the panko breadcrumbs lightly in a dry pan before coating the chicken. Serve with a side of cooling cucumber salad or jasmine rice for a complete meal.
