  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat and add the chicken breasts. Cook for 5-6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Add fresh blueberries, honey, thyme leaves, chicken broth, and balsamic vinegar to the skillet. Stir and cook for 5-7 minutes until the sauce thickens slightly and blueberries begin to burst.
  5. Return the chicken breasts to the skillet, spooning the sauce over them to coat evenly. Cook for another 2 minutes to warm through.
  6. Serve the chicken topped with the blueberry thyme sauce. Garnish with extra thyme if desired.

Notes

For a richer flavor, serve with creamy mashed potatoes or a side of roasted vegetables. Leftover sauce can be refrigerated for up to 3 days.
