This creamy Cajun Chicken Pasta blends tender spiced chicken with a rich, flavorful sauce and perfectly cooked pasta for a quick and satisfying meal.

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Rub the chicken breasts evenly with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-6 minutes per side until cooked through and nicely browned. Remove chicken and let rest.
  4. In the same skillet, add sliced bell peppers, onion, and garlic. Sauté for 4-5 minutes until vegetables are tender.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer, then reduce heat to low.
  6. Slice the rested chicken into strips and return to the skillet. Stir in Parmesan cheese and cooked pasta. Toss everything together to combine and heat through.
  7. Season with salt and black pepper as needed. Garnish with chopped parsley before serving.

Notes

For extra heat, add a pinch of cayenne pepper or serve with crushed red pepper flakes on the side.
