Cheesy Broccoli Chicken and Rice Casserole

This cheesy broccoli chicken and rice casserole is a comforting, flavorful one-dish meal perfect for busy weeknights, combining tender chicken, tender broccoli, and creamy cheese sauce.

  • 2 cups cooked chicken, shredded
  • 2 cups cooked white rice
  • 3 cups fresh broccoli florets
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Steam or blanch broccoli florets until just tender; drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add chopped onion and garlic and sauté until translucent, about 3 minutes.
  4. In a large mixing bowl, combine cooked chicken, cooked rice, steamed broccoli, sautéed onion and garlic, sour cream, cream of mushroom soup, milk, and 1 cup shredded cheddar cheese. Season with salt, pepper, and paprika if using. Mix well.
  5. Transfer the mixture into a greased 9×13-inch baking dish. Sprinkle remaining 1/2 cup cheddar cheese and Parmesan cheese evenly over the top.
  6. Bake uncovered for 25-30 minutes until the casserole is bubbly and the cheese on top is melted and golden.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, try adding a teaspoon of dried thyme or swapping the cream of mushroom soup for cream of chicken. Serve with a side salad for a balanced meal.
