  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup finely chopped red onion
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine the chickpeas, diced avocado, crumbled feta, cherry tomatoes, and red onion.
  2. In a small bowl, whisk together the lemon juice and olive oil until emulsified.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Add chopped parsley and season with salt and black pepper to taste.
  5. Allow the salad to rest for 5 minutes before serving to let the flavors meld.

Notes

For extra crunch, sprinkle toasted sunflower seeds or walnuts on top before serving.
