  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, peppermint extract, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture and stir until a dough forms.
  6. Place powdered sugar in a shallow bowl. Roll dough into 1-inch balls, then coat each ball thoroughly in powdered sugar.
  7. Arrange the coated dough balls on the prepared baking sheet, spaced about 2 inches apart.
  8. Bake for 10-12 minutes, until the cookies have spread and cracked on top but are still soft in the center.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra minty flavor, add a few drops of green food coloring to the dough before baking, or sprinkle crushed peppermint candies on top of the cookies immediately after baking.
