Chocolate Mint Pie

This Chocolate Mint Pie combines a rich chocolate base with refreshing mint for a decadent and cool dessert that’s perfect for any occasion.

Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • 6 tbsp unsalted butter, melted
  • 1 cup semisweet chocolate chips
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp peppermint extract
  • 2 cups whipped cream, divided
  • 2 tbsp cocoa powder, for dusting
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Mix chocolate cookie crumbs and melted butter until well combined.
  2. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie plate.
  3. Bake the crust for 8 minutes, then remove and let cool completely.
  4. In a medium bowl, melt the chocolate chips over a double boiler or in the microwave, stirring until smooth. Let cool slightly.
  5. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  6. Stir peppermint extract into the melted chocolate, then gradually mix into the cream cheese mixture until fully combined.
  7. Fold in 1 cup whipped cream gently to lighten the filling.
  8. Spread the filling evenly into the cooled crust and refrigerate for at least 4 hours or until set.
  9. Before serving, top with remaining whipped cream, dust with cocoa powder, and garnish with fresh mint leaves if desired.

Notes

For a stronger mint flavor, add an extra ½ teaspoon of peppermint extract or garnish with crushed peppermint candies.
