Homemade Cinnamon Roll Cheesecake Cookies

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for cheesecake filling)
  • 1/4 cup brown sugar (for cinnamon swirl)
  • 1 tbsp ground cinnamon (for cinnamon swirl)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, then mix in 2 tsp vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and 2 tsp cinnamon.
  5. Gradually add dry ingredients to the wet ingredients, mixing until combined.
  6. In another bowl, beat cream cheese, powdered sugar, and 1 tsp vanilla extract until smooth to create the cheesecake filling.
  7. In a small bowl, mix 1/4 cup brown sugar and 1 tbsp cinnamon for the cinnamon swirl.
  8. Take 1 tablespoon of cookie dough, then flatten it slightly in your hand.
  9. Place about 1 teaspoon of cheesecake filling and a pinch of the cinnamon swirl mixture in the center. Wrap the dough around the filling to enclose it completely and roll into a ball.
  10. Place the filled dough balls on prepared baking sheets about 2 inches apart.
  11. Bake for 12-15 minutes or until edges are lightly golden.
  12. Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
