These Cottage Cheese Egg Bites are a protein-packed, fluffy breakfast option perfect for a quick and healthy start to your day.

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped spinach (optional)
  • 1/4 cup diced bell peppers
  • Salt and pepper to taste
  • Cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or butter.
  2. In a mixing bowl, whisk together the eggs, cottage cheese, cheddar cheese, salt, and pepper until well combined.
  3. Fold in the chopped spinach and diced bell peppers.
  4. Pour the mixture evenly into the prepared muffin tin cups.
  5. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  6. Allow to cool slightly before removing from the tin and serving.
