  • 2 cups cooked butter beans (or canned, drained and rinsed)
  • 2 tablespoons unsalted butter
  • 1 tablespoon white miso paste
  • 1/4 cup vegetable broth
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
  2. Add the cooked butter beans to the skillet and stir to combine with onions and garlic.
  3. In a small bowl, whisk together the white miso paste and vegetable broth until smooth.
  4. Pour the miso mixture into the skillet with the beans and stir to coat evenly.
  5. Add the butter to the skillet and stir until melted and beans are creamy and well-coated.
  6. Cook for an additional 2-3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  7. Garnish with chopped fresh parsley if desired and serve warm.

Notes

For extra richness, drizzle a little toasted sesame oil over the beans before serving or add a sprinkle of toasted sesame seeds.
