Creamy Tuscan Chicken is a rich and flavorful skillet dish featuring tender chicken breasts simmered in a luscious sauce of sun-dried tomatoes, spinach, garlic, and Parmesan cheese.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and cook for 5-7 minutes on each side until golden and cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  5. Add sun-dried tomatoes and cook for 2 minutes.
  6. Pour in chicken broth and heavy cream, stir to combine.
  7. Mix in Parmesan cheese until the sauce thickens, about 3-5 minutes.
  8. Add fresh spinach and cook until wilted.
  9. Return the chicken to the skillet, spoon the sauce over it, and simmer for 2-3 more minutes.
  10. Serve warm, garnished with extra Parmesan if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or use Greek yogurt; serve over pasta or cauliflower rice for a complete meal.
