  • 4 boneless, skinless chicken breasts
  • 1 medium butternut squash, peeled and cubed
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, chicken broth, olive oil, thyme, salt, and pepper.
  2. Place the cubed butternut squash at the bottom of the crockpot.
  3. Lay the chicken breasts on top of the squash.
  4. Pour the maple Dijon sauce evenly over the chicken and squash.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and squash is tender.
  6. Before serving, check seasoning and adjust salt and pepper if needed.
  7. Serve hot, spooning sauce and squash alongside the chicken.
