Crockpot Potato Pea Curry

A hearty and flavorful crockpot potato pea curry that combines tender potatoes and sweet peas simmered in a fragrant blend of spices, perfect for an easy and comforting meal.

  • 4 large potatoes, peeled and diced
  • 1 cup frozen peas
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (optional)
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a skillet over medium heat. Add onions, garlic, and ginger; sauté until onions are translucent.
  2. Transfer the sautéed mixture to the crockpot.
  3. Add diced potatoes, peas, diced tomatoes, coconut milk, curry powder, cumin, coriander, turmeric, chili powder, and salt to the crockpot. Stir well to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
  5. Stir gently before serving and garnish with fresh cilantro.

Notes

Serve this curry with steamed basmati rice or warm naan bread for a complete meal. For extra heat, add a chopped green chili or a dash of cayenne pepper.
