Croissant Breakfast Casserole

A rich and savory croissant breakfast casserole combining flaky croissants, eggs, cheese, and breakfast sausage baked to golden perfection—perfect for a hearty morning meal.

  • 6 large croissants, torn into bite-sized pieces
  • 8 large eggs
  • 2 cups whole milk
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 8 oz breakfast sausage, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, Dijon mustard, salt, pepper, and thyme.
  3. Place torn croissants evenly in the prepared baking dish.
  4. Sprinkle cooked sausage and both cheeses over the croissants.
  5. Pour the egg mixture evenly over the croissant pieces, pressing down gently to soak all pieces.
  6. Cover with foil and refrigerate for at least 1 hour or overnight for best results.
  7. Remove foil and bake for 40-45 minutes until the casserole is set and golden on top.
  8. Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For an extra flavorful casserole, add sautéed mushrooms or bell peppers before baking. Serve with fresh fruit or a light salad for a balanced meal.
