Tortellini Soup

A comforting and hearty Italian-inspired tortellini soup loaded with tender cheese tortellini, savory broth, fresh vegetables, and Italian herbs — perfect for a cozy meal any day.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 (19 oz) package cheese tortellini
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 cups fresh spinach, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté until vegetables are tender, about 5-7 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Pour in the chicken broth and diced tomatoes with their juice. Stir in dried basil and oregano.
  4. Bring the soup to a boil, then reduce heat and simmer for 10 minutes to combine flavors.
  5. Add the cheese tortellini and cook according to package instructions, usually 3-5 minutes, until tender.
  6. Stir in chopped spinach and cook for another 2 minutes until wilted.
  7. Season with salt and pepper to taste. Ladle into bowls and sprinkle with grated Parmesan cheese before serving.

Notes

For a creamier version, stir in 1/2 cup of heavy cream just before serving. Garnish with fresh basil or parsley for extra freshness.
