Green Beans

Fresh green beans quickly sautéed to tender-crisp perfection, seasoned simply to highlight their natural flavor—an easy and healthy side dish for any meal.

Ingredients

  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp lemon juice (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the green beans and blanch for 3-4 minutes until bright green and just tender.
  3. Drain and immediately plunge the green beans into a bowl of ice water to stop cooking. Drain again.
  4. Heat olive oil in a skillet over medium heat.
  5. Add minced garlic and sauté for 1 minute until fragrant.
  6. Add the green beans to the skillet and toss to coat with the garlic and oil.
  7. Season with salt and black pepper to taste.
  8. Cook for 3-4 minutes, stirring occasionally, until heated through and slightly crisp.
  9. Remove from heat, drizzle with lemon juice if using, and serve immediately.

Notes

For added texture and flavor, sprinkle toasted almonds or grated Parmesan cheese over the green beans just before serving.
