1 lb beef sirloin, cut into bite-sized pieces
4 tbsp unsalted butter, divided
4 cloves garlic, minced
1 tsp fresh thyme leaves
Salt and pepper, to taste
2 lbs russet potatoes, peeled and chopped
1/2 cup whole milk
1/4 cup heavy cream
2 tbsp sour cream
2 tbsp fresh chives, chopped
2 tbsp olive oil
Instructions
Place the chopped potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. Drain and return to pot.
In a small saucepan, heat milk and heavy cream over low heat until warm.
Mash the potatoes, then gradually add the warm milk and cream mixture, sour cream, salt, and pepper. Stir until creamy and smooth. Keep warm.
Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
Add the beef bites, season with salt, pepper, and thyme, and cook until browned on all sides, about 4-5 minutes.
Add remaining 2 tablespoons butter and minced garlic to the skillet. Stir and cook for another 1-2 minutes until fragrant and the beef is coated in garlic butter.
Remove from heat. Serve the garlic butter beef bites over or alongside the creamy mashed potatoes.
Garnish with chopped chives and additional thyme if desired.
Notes
For extra richness, try adding a sprinkle of grated Parmesan cheese to the mashed potatoes just before serving.
