This Garlic Butter Chicken Thigh Skillet is a quick and flavorful one-pan meal featuring tender chicken thighs cooked in a rich garlic butter sauce, perfect for an easy weeknight dinner.

  • 6 bone-in, skin-on chicken thighs
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry and season both sides with salt, pepper, thyme, and rosemary.
  2. Heat olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
  3. Flip the chicken thighs and cook for another 5 minutes.
  4. Reduce heat to medium, add butter and minced garlic to the skillet. Spoon the garlic butter over the chicken as it melts.
  5. Pour in the chicken broth and let it simmer, uncovered, for 10-12 minutes until the chicken is cooked through and the sauce has slightly thickened.
  6. Garnish with chopped fresh parsley before serving.

Notes

Serve with steamed vegetables or over creamy mashed potatoes for a complete meal. You can also add a squeeze of lemon juice for a bright finish.
