Gluten Free Chicken Tenders

Deliciously crispy and tender, these gluten free chicken tenders are perfect for a healthy meal or snack, coated with a flavorful gluten free breadcrumb mix.

Ingredients

  • 1 lb chicken tenders
  • 1 cup gluten free breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs
  • 2 tbsp olive oil (for frying) or cooking spray (for baking)

Instructions

  1. Preheat oven to 400°F (if baking) or heat olive oil in a skillet over medium heat (if frying).
  2. In a shallow bowl, mix gluten free breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken tender first into the beaten eggs, then coat thoroughly with the breadcrumb mixture.
  5. Place coated tenders on a baking sheet lined with parchment paper if baking, or carefully place in the hot skillet if frying.
  6. If baking, spray tenders lightly with cooking spray and bake for 18-20 minutes, flipping halfway, until golden and cooked through.
  7. If frying, cook tenders 3-4 minutes per side until golden brown and cooked through.
  8. Remove from heat and let rest for a couple of minutes before serving.

Notes

For extra flavor, serve with a side of honey mustard or your favorite dipping sauce. You can also bake tenders instead of frying for a lighter option.
