Green Chicken Chili

A flavorful and comforting Green Chicken Chili made with tender shredded chicken, roasted green chilies, and a blend of spices, perfect for a cozy dinner.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless skinless chicken breasts
  • 4-5 roasted poblano or Anaheim green chilies, chopped
  • 1 can (4 oz) diced green chilies
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Optional toppings: shredded cheese, sour cream, avocado slices

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 4-5 minutes.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Place chicken breasts in the pot, add cumin, oregano, salt, and pepper. Pour in chicken broth and bring to a simmer.
  4. Cover and cook for 20-25 minutes, or until chicken is cooked through.
  5. Remove chicken from pot and shred using two forks.
  6. Return shredded chicken to the pot and add roasted green chilies and canned diced chilies. Stir to combine.
  7. Simmer for another 10 minutes to let flavors meld together.
  8. Stir in fresh cilantro and lime juice just before serving.
  9. Serve hot with optional toppings like shredded cheese, sour cream, or avocado slices.

Notes

For extra heat, add a diced jalapeño or a pinch of cayenne pepper. This chili also pairs well with warm corn tortillas or a side of Spanish rice.
