Ground Turkey Stuffed Peppers

Delicious and healthy Ground Turkey Stuffed Peppers, packed with seasoned turkey, veggies, and cheese, perfect for a nutritious family dinner.

  • 4 large bell peppers, halved and seeded
  • 1 lb ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked brown rice
  • 1 cup diced tomatoes
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until translucent.
  3. Add ground turkey and cook until browned and cooked through, breaking it up with a spoon.
  4. Stir in diced tomatoes, cooked rice, oregano, cumin, salt, and pepper. Cook for 3-4 minutes until well combined.
  5. Remove skillet from heat and stir in chopped parsley and half of the shredded mozzarella cheese.
  6. Place pepper halves in a baking dish and fill each with the turkey mixture.
  7. Top each stuffed pepper with remaining mozzarella cheese.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until peppers are tender and cheese is golden.
  9. Let cool slightly before serving.

Notes

For extra flavor, sprinkle with red pepper flakes before baking or serve with a side of fresh salad.
