Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • 1 cup cooked jasmine rice
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 1/4 cup sliced green onions
  • Sesame seeds for garnish
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, and ginger to make the glaze.
  2. Season the salmon fillets with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium-high heat. Add salmon fillets skin-side down and cook for 4-5 minutes.
  4. Flip the salmon and brush the glaze generously over the fillets. Cook for another 3-4 minutes, basting with glaze until salmon is cooked through and caramelized.
  5. Divide cooked jasmine rice into bowls. Arrange steamed broccoli and shredded carrots around the rice.
  6. Place the glazed salmon on top of the rice and vegetables.
  7. Garnish with sliced green onions and sesame seeds. Serve immediately.

Notes

For extra flavor, add a squeeze of fresh lime juice over the bowl just before serving or swap broccoli for bok choy for a different veggie option.
