  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 2 tbsp honey
  • 2 tbsp sriracha sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • Sesame seeds for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the jasmine rice according to package instructions; set aside.
  2. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, garlic, and ginger; set the sauce aside.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  5. Add the broccoli florets and shredded carrots to the skillet and sauté for 3-4 minutes until vegetables are tender-crisp.
  6. Pour the honey sriracha sauce over the chicken and vegetables; stir well to coat and cook for another 2 minutes until sauce thickens slightly.
  7. Serve the chicken and vegetables over the cooked jasmine rice.
  8. Garnish with sliced green onions and sesame seeds before serving.

Notes

For added crunch and flavor, top the bowls with crushed peanuts or cashews. Serve with a side of pickled cucumbers for a refreshing contrast.
