  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • Zest of 1 orange
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a large bowl, beat the sugar and eggs until pale and fluffy.
  3. Slowly add the vegetable oil and yogurt, mixing until combined.
  4. Stir in almond and vanilla extracts along with the lemon and orange zest.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.

Notes

For an extra touch, serve with a dollop of whipped cream or a drizzle of amaretto liqueur to enhance the almond flavor.
