Jalapeno Poppers Nourish Bowl

A vibrant and flavorful nourish bowl featuring spicy jalapeno poppers paired with fresh vegetables, grains, and a creamy dressing for a wholesome, satisfying meal.

  • 4 fresh jalapenos, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 1/4 cup black beans, rinsed and drained
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1/4 cup corn kernels, cooked

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the softened cream cheese and shredded cheddar cheese together.
  3. Fill each jalapeno half with the cheese mixture and place them on a baking sheet lined with parchment paper.
  4. Bake the jalapeno poppers for 15 minutes or until the cheese is bubbly and slightly golden.
  5. While the poppers bake, prepare the quinoa according to package instructions if not already cooked.
  6. In a large bowl, combine baby spinach, cherry tomatoes, black beans, corn kernels, avocado slices, and cooked quinoa.
  7. Drizzle with olive oil, lime juice, and season with salt and pepper. Toss gently to combine.
  8. Place the baked jalapeno poppers on top of the nourish bowl and sprinkle with fresh cilantro.
  9. Serve immediately and enjoy this colorful, spicy, and nutritious meal.

Notes

For an extra crunch, sprinkle toasted pumpkin seeds on top or add a dollop of Greek yogurt as a cooling contrast to the spicy jalapenos.
