  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 (20 oz) can crushed pineapple, drained
  • 1/2 cup buttermilk
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients; mix just until combined.
  6. Fold in the drained crushed pineapple gently.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool completely before serving.

Notes

For an extra tropical touch, top with whipped cream and toasted coconut flakes before serving.
