Mediterranean Chicken Orzo

Mediterranean Chicken Orzo is a flavorful and wholesome one-pan meal combining tender chicken, tender orzo pasta, fresh vegetables, and vibrant Mediterranean herbs for a quick and satisfying dinner.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 1 1/2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  2. In the same skillet, add onion and garlic. Sauté until softened and fragrant, about 2-3 minutes.
  3. Add the orzo to the skillet and toast for 1-2 minutes, stirring frequently.
  4. Pour in the chicken broth, then add oregano, thyme, salt, and pepper. Bring to a simmer.
  5. Reduce heat to low, cover, and cook until orzo is tender and most of the liquid is absorbed, about 10-12 minutes.
  6. Stir in the cooked chicken, cherry tomatoes, and Kalamata olives. Cook for another 2-3 minutes to warm through.
  7. Remove from heat and stir in lemon juice, fresh parsley, and crumbled feta cheese. Adjust seasoning as needed.
  8. Serve warm, garnished with extra parsley or feta if desired.

Notes

For extra flavor, drizzle with a little more olive oil or add a sprinkle of crushed red pepper flakes before serving. This dish pairs well with a side Greek salad or crusty bread.
