Mediterranean Olive Cherry Tomato

A refreshing Mediterranean salad combining the sweetness of cherry tomatoes with the briny flavor of olives, perfect as a light appetizer or side dish.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 cup mixed Mediterranean olives (kalamata, green), pitted and sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a medium bowl, combine halved cherry tomatoes and sliced olives.
  2. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.
  3. Pour the dressing over the tomato and olive mixture and toss gently to coat.
  4. Let the salad marinate in the refrigerator for at least 15 minutes to allow flavors to meld.
  5. Garnish with fresh basil leaves before serving.

Notes

For added texture, sprinkle some crumbled feta cheese or toasted pine nuts on top before serving.
