  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. Add chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add sliced mushrooms and cook until they release their moisture and become tender, about 5 minutes.
  6. Pour in chicken broth and heavy cream, bring to a simmer.
  7. Stir in Parmesan cheese until melted and sauce thickens slightly.
  8. Return chicken to the pan, spoon sauce over chicken, and cook for an additional 2-3 minutes to heat through.
  9. Garnish with chopped fresh parsley before serving.
