One Pan Sausage Green Beans and Potatoes

This hearty one pan meal combines savory sausage, tender green beans, and crispy roasted potatoes for an easy and flavorful dinner option. Perfect for a busy weeknight with minimal cleanup.

  • 1 lb smoked sausage, sliced into 1/2-inch pieces
  • 1 lb baby potatoes, halved
  • 12 oz fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Spread the potatoes in a single layer on a large baking sheet and roast for 20 minutes.
  4. Remove the baking sheet from the oven and add the sliced sausage and green beans. Drizzle with remaining 1 tablespoon olive oil and toss everything to combine.
  5. Return the baking sheet to the oven and roast for an additional 15-20 minutes, until the green beans are tender and the sausage is heated through, stirring halfway.
  6. Sprinkle with crushed red pepper flakes if using, garnish with fresh parsley, and serve warm.

Notes

For extra flavor, try adding a splash of balsamic vinegar or a sprinkle of grated Parmesan cheese just before serving.
