One-Pot Ground Turkey Orzo

This One-Pot Ground Turkey Orzo is a quick and flavorful meal combining lean ground turkey with tender orzo pasta, simmered together with aromatic vegetables and herbs for a comforting dinner.

  • 1 lb ground turkey
  • 1 cup orzo pasta
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add the diced onion and red bell pepper; sauté for 3-4 minutes until softened.
  3. Add minced garlic and cook for another 1 minute until fragrant.
  4. Add ground turkey, breaking it apart with a spatula; cook until no longer pink, about 5-6 minutes.
  5. Stir in oregano, thyme, salt, and pepper.
  6. Add orzo pasta, chicken broth, and diced tomatoes to the pot; stir to combine.
  7. Bring mixture to a boil, then reduce heat to low and cover. Simmer for 12-15 minutes until orzo is tender and liquid is mostly absorbed.
  8. Remove from heat and let stand covered for 5 minutes.
  9. Fluff with a fork and garnish with fresh parsley before serving.

Notes

For extra creaminess, stir in 1/4 cup grated Parmesan cheese just before serving.
