Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup smoked salmon, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • 24 mini tart shells
  • 1/4 cup finely chopped red onion
  • 12 cucumber slices
  • 24 cherry tomatoes, halved
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine cream cheese, smoked salmon, dill, lemon juice, red onion, salt, and pepper; mix until smooth.
  2. Fill each mini tart shell with about one tablespoon of the cream cheese mixture.
  3. Top half of the tart shells with cucumber slices and the other half with cherry tomato halves.
  4. Garnish with additional dill if desired and chill for 30 minutes before serving.

Notes

For a vegetarian option, substitute smoked salmon with finely chopped roasted red peppers or olives. Serve chilled for best flavor.
