Pineapple Chicken

Pineapple Chicken is a vibrant and flavorful dish featuring tender chicken pieces cooked with sweet pineapple chunks and a tangy sauce, perfect for a quick and delicious dinner.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced (optional)
  • Cooked white rice, for serving

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes; remove from pan and set aside.
  3. In the same skillet, add garlic and ginger; sauté for 1 minute until fragrant.
  4. Stir in pineapple juice, soy sauce, brown sugar, and rice vinegar; bring to a simmer.
  5. Add pineapple chunks and return chicken to the skillet.
  6. Pour in the cornstarch slurry and stir well; cook for 2-3 minutes until the sauce thickens.
  7. Remove from heat and sprinkle with sliced green onions if desired.
  8. Serve hot over cooked white rice.

Notes

For extra heat, add a pinch of red pepper flakes or a dash of sriracha sauce to the sauce mixture.
