protein pancakes

Delicious and fluffy protein pancakes packed with nutrients, perfect for a healthy and energizing breakfast.

Ingredients

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 2 eggs
  • 1/2 cup cottage cheese
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Coconut oil or cooking spray for the pan

Instructions

  1. Combine rolled oats in a blender and blend until they form a fine flour.
  2. Add protein powder, eggs, cottage cheese, almond milk, baking powder, cinnamon, vanilla extract, and salt to the blender.
  3. Blend all ingredients until you get a smooth batter.
  4. Heat a non-stick skillet over medium heat and lightly grease with coconut oil or cooking spray.
  5. Pour about 1/4 cup of batter per pancake onto the skillet.
  6. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook the other side for another 2 minutes until golden brown.
  7. Repeat with remaining batter and serve warm with your favorite toppings.

Notes

For extra flavor, serve with fresh berries, a drizzle of honey, or Greek yogurt.
