  • 1 loaf brioche or challah bread, cut into cubes
  • 2 cups half-and-half
  • 1 can (15 oz) pumpkin puree
  • 4 large eggs
  • 3/4 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup chopped pecans (optional)
  • 2 tablespoons unsalted butter, melted
  • Maple syrup for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Place bread cubes evenly in the prepared baking dish.
  3. In a large bowl, whisk together half-and-half, pumpkin puree, eggs, brown sugar, pumpkin pie spice, vanilla extract, cinnamon, and salt until smooth.
  4. Pour the pumpkin custard mixture evenly over the bread cubes, pressing gently to soak the bread.
  5. Sprinkle chopped pecans on top if using, then drizzle with melted butter.
  6. Cover the dish with aluminum foil and refrigerate for at least 2 hours or overnight for best results.
  7. Bake covered for 40 minutes, then remove foil and bake an additional 15-20 minutes until the top is golden and the custard is set.
  8. Let cool slightly before serving. Drizzle with maple syrup and enjoy warm.

Notes

For extra crunch, sprinkle additional pecans or a streusel topping before baking. Serve with fresh whipped cream for an indulgent treat.
