Shrimp Scampi Nourish Bowl

This Shrimp Scampi Nourish Bowl combines succulent garlic butter shrimp with vibrant vegetables and quinoa for a wholesome, flavorful meal perfect for dinner.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup cooked quinoa
  • 1 cup steamed broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Red pepper flakes, optional for heat

Instructions

  1. Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add shrimp, season with salt, pepper, and red pepper flakes if using, then cook for 2-3 minutes per side until pink and opaque.
  4. Remove shrimp from skillet and set aside.
  5. In the same skillet, add remaining butter, lemon juice, and lemon zest; stir to combine and simmer for 1 minute.
  6. Return shrimp to the skillet and toss to coat in the lemon garlic butter sauce.
  7. To assemble the bowl, layer cooked quinoa, steamed broccoli, and cherry tomatoes.
  8. Top with shrimp and drizzle remaining sauce from the skillet.
  9. Garnish with chopped fresh parsley and serve immediately.

Notes

For extra flavor, sprinkle toasted pine nuts or add a drizzle of chili oil before serving.
