Strawberry Cheesecake Cookies

Delight in soft and creamy strawberry cheesecake cookies that combine the sweet freshness of strawberries with rich cheesecake flavor in every bite.

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then mix in vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the crushed freeze-dried strawberries and white chocolate chips.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are lightly golden but centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra freshness, garnish cookies with a small slice of fresh strawberry on top before serving.
