Strawberry Sugar Cookies

Delightfully soft and sweet, these Strawberry Sugar Cookies blend fresh strawberry flavor with classic sugar cookie goodness for a perfect treat.

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ cup fresh strawberries, finely chopped
  • 2 tablespoons powdered sugar (for rolling)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gently fold in the chopped strawberries.
  6. Gradually blend in the dry ingredients until just combined, do not overmix.
  7. Roll dough into 1-inch balls, then roll each ball in powdered sugar to coat.
  8. Place the balls 2 inches apart on the prepared baking sheet.
  9. Bake for 8-10 minutes or until the edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra burst of strawberry flavor, add a small dollop of strawberry jam on top of each cookie before baking.
