Stuffed Bell Pepper Rice Boats

Delicious stuffed bell peppers filled with savory rice, vegetables, and melted cheese create a colorful and healthy meal perfect for any occasion.

  • 4 large bell peppers (any color)
  • 1 cup cooked white rice
  • 1/2 cup diced tomatoes
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup corn kernels
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the bell peppers in half lengthwise and remove seeds and membranes.
  3. Heat olive oil in a skillet over medium heat, sauté onions and garlic until translucent.
  4. Add diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper. Cook for 3-4 minutes.
  5. Stir in the cooked rice and half of the shredded cheese. Mix well and remove from heat.
  6. Place bell pepper halves in a baking dish and spoon the rice mixture into each pepper evenly.
  7. Sprinkle the remaining cheese over each stuffed pepper.
  8. Bake uncovered for 25-30 minutes until peppers are tender and cheese is melted and golden.
  9. Remove from oven and garnish with fresh cilantro if desired before serving.

Notes

For added protein, mix in cooked ground turkey or beef with the rice filling before stuffing the peppers.
