  • 1 cup cooked quinoa
  • 1 cup shredded rotisserie chicken
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 avocado, sliced
  • 1 cup mixed greens
  • 1/4 cup diced tomatoes
  • 2 tablespoons chopped red onion
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped cilantro
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, shredded chicken, black beans, corn, mixed greens, diced tomatoes, and red onion.
  2. Drizzle olive oil and lime juice over the mixture and toss well to combine.
  3. Season with salt and pepper to taste.
  4. Top the bowl with sliced avocado, shredded cheddar cheese, and chopped cilantro.
  5. Serve immediately or chill for 30 minutes for a refreshing cold option.
