Tomato Basil Noodle Soup

A comforting and flavorful tomato basil noodle soup that combines fresh herbs and tender noodles in a rich tomato broth, perfect for a cozy meal.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups tomato puree
  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup egg noodles
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Pour in tomato puree and vegetable broth, stirring to combine.
  4. Add sugar, salt, pepper, and red pepper flakes if using. Bring the soup to a boil, then reduce heat and simmer for 10 minutes.
  5. Add egg noodles to the pot and cook until tender, about 7-8 minutes.
  6. Stir in chopped fresh basil and heavy cream if desired, and heat through for 2 more minutes.
  7. Taste and adjust seasoning if necessary. Serve warm.

Notes

For a vegan version, omit the heavy cream or replace it with coconut cream. Garnish with extra fresh basil or grated Parmesan cheese for added flavor.
