  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes

  • Salt and black pepper, to taste
  • 4 cups kale, chopped
  • 1 (9-ounce) package cheese tortellini
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  2. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth and diced tomatoes with their juice. Stir in oregano, basil, salt, and black pepper. Bring the mixture to a boil.
  4. Once boiling, add chopped kale and reduce heat to a simmer. Cook for 5 minutes until kale is tender.
  5. Add cheese tortellini to the soup and cook according to package instructions, typically 3-5 minutes, until tortellini are al dente.
  6. Stir in grated Parmesan cheese. Adjust seasoning with additional salt and pepper if needed.
  7. Ladle soup into bowls and garnish with extra Parmesan cheese before serving.
