  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups cooked chicken breast, shredded
  • 6 ounces egg noodles
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, grated ginger, and ground turmeric; cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add sliced carrots and celery to the broth. Reduce heat and simmer for 10 minutes until vegetables are tender.
  5. Stir in shredded chicken and egg noodles. Cook for an additional 7-8 minutes until noodles are tender.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and stir in fresh parsley and lemon juice before serving.
